I began juicing at Christmas, actually as soon as I opened the package Christmas Day I pretty much started! I have juiced almost every single day, even when Dan and I went on our weekend away together I brought my juicer and juiced. I feel so much better since I started juicing, and I have had a lot of fun trying to create new concoctions (some of the recipes I've seen at the major sites look boring... and blech!) I have tried many different recipes, made up my own, tasted some duds and have made mistakes. For instance, I have learned that if you juice blueberries it makes the juice gloopy with a disgusting texture - in fact, it is better to skip trying to juice berries and just eat them whole... which is how I think most of us prefer them. ;-) I have also learned that it isn't worth it to juice broccoli or brussel sprouts - they ruin the flavor anyways, but a pear or ginger can fix almost anything!
I have both a centrifugal juicer and a masticating juicer and feel like the masticator is best for veggies and hard fruits while the centrifugal is better for citrus fruits, melons and other loose and watery plants with lower fiber content. I try to remember what I like, but sometimes I forget exactly what I did to make "that one that was really good" because I am always trying new things, but I am putting them here. I definitely plan to add more as I try them out.
My sister's family and mine went to the apple orchard together, I think we got 20 pounds of apples between us!, and it's been fun putting recipes together. Dan completely killed me in the pie contest, but I did make something that everyone loved - and it is so easy to make with just a few ingredients. Along with apples, our orchard also has its own bee hive so I also picked up some raw honey (if you haven't tried raw honey you must - you will never want refined ever again!) which I also used in this recipe.
For months now Layne has been begging me to make these, but me being that mom I am have turned him down because I just don't feel good about adding syrup to a starch... You know, being healthy and all. ;)
Well tonight I caved. I made them. And I loved them. Surprise!
I don't know if Layne made up this recipe himself or if he had them at a friend's house years ago and just remembered, but I am happy to be able to add this to my index of veggie sides. What is so wonderful about this is that it is EASY! Very few ingredients needed.
We had our first real grill out of the season this week, and we made Mesquite chicken for the first time ever, and it came in the form of kabobs. I wasn't sure how it would turn out because I have never had a mesquite kabob, but it was happily an experiment that turned out well! :) I wish I would have thought to grab the recorder before we started because when we were grilling the colors of the meat and vegetables were just sooooooo pretty!!! But I know that you are smart and can figure out how to poke veggies and meat with a stick, so video not necessary, so it was definitely fine not to have one. As Simon Cowell would say: to have recorded just that would have been "self-indulgent". ;)
