| Layne's Roasted Maple Syrup and Rosemary Potatoes |

Well tonight I caved. I made them. And I loved them. Surprise! I don't know if Layne made up this recipe himself or if he had them at a friend's house years ago and just remembered, but I am happy to be able to add this to my index of veggie sides. What is so wonderful about this is that it is EASY! Very few ingredients needed.
Preheat the oven to 400*. Dice up your potatoes (I leave the skin on, I know this grosses some people out but the skin is good for you) and put them in your baking dish, I use a 9x9 glass dish. Drizzle just a little of the EVOO on top and follow that up with a few grinds of salt, or 1/4 tsp if you are using table salt, and about 1 tsp on rosemary - more or less depending on your taste buds. Stir everything around until the potatoes are coated and the rosemary looks evenly distributed. Now drizzle the maple syrup over the potatoes in tiny, tiny lines. You don't want to coat the potatoes with the syrup, you're just giving it a little flavor - a little bit goes a long way. ;) Now you can stir the potatoes a few times and put it in the oven. The reason why I covered the potatoes with olive oil before adding the syrup is so that when I put the syrup on the potatoes the would distribute easily. That syrup is sticky! :p Let it sit in the oven for 20 minutes. Take it out and stir it. Put it back in for 20 more minutes. Take it out and stir it again. Test with a fork or knife, and if it's not done put it back in for 5-10 minutes. You know it's done when it is just before being "mashed" ready. Honestly, I did not think I would like this - rosemary and maple syrup together! But everyone loved it, except for Dan that is. He is the ultimate meat and potato man, though. ;) If you try it, let me know what you think! Also, if you made alterations I would also like to hear them. |
For months now Layne has been begging me to make these, but me being that mom I am have turned him down because I just don't feel good about adding syrup to a starch... You know, being healthy and all. ;)
